Green Leafy Vegetables – Going Green

So this year the goal was to be more green, in an environmental way, however what I didn’t bank on was going more green in my diet.

So far this year I have discovered two new varieties of the brilliant green stuff, both hailing from the Kale family

Cavolo Nero (Italian Black Kale) and Kalettes, a hybrid of kale and Brussel Sprouts

Both are powerhouses as far as nutrition is concerned, but Kalettes in particular are nutritionally dense,

high in Vitamins A (beta carotene) C and K, protein, fibre, Omega 3, flavonoids, polyphenols and antioxidants.

Cavolo Nero boast Vits A, C, K and B-vits plus fibre, calcium, manganese, copper and iron

What I have personally found with both of these is they are much more subtle in taste,

they are great stir-fried, steamed and in smoothies so give ’em a go and be greener
