This homemade tomato sauce is one of my go-to recipes and I probably make it in some variation at least twice a week
Perfect for a pasta Napolina and its great on steamed chicken or fish.
You can also use as a base for homemade pizza
Add some vegetable stock and pasta and its a minestrone
Add a splash of red wine during cooking and some good lean mince or a meat substitute for Bolognese or lasagne,
Top the above with diced potatoes and a sprinkle of cheese and its a delicious bake
Add some peppers, carrots, spinach, mushrooms and courgettes for an easy way to add veggies to your day,
And if your little ones won’t eat their vegetables whizz up in a blender (or a stick blender) and they will never know!
Ingredients for homemade tomato sauce
1 Jar Passata (400g)
1 Medium Onion
2 Cloves Garlic
1 Teaspoon Mixed Italian Herbs
1 Tablespoon Olive or Rapeseed Oil (Cold Pressed)
Method
Roughly chop onions and garlic,
heat oil in a pan and add garlic and onions, cook over a medium heat for 5 minutes.
Add the Passata and herbs, turn heat to low and cook for 10 minutes,
stir occasionally and add a splash of water if it starts to catch…done

This is a great healthy and budget-friendly homemade recipe for minestrone, its fantastic for using up veggies in your fridge, so although I’m giving you my recipe you can inter-change ingredients for whatever you have available.
You can also swap out the pasta for any type of beans which are super healthy and full of fibre or even tinned corn all are budget-friendly-serves 2
Ingredients
1 Onion – roughly chopped
2 Cloves Garlic – finely chopped
1 Medium carrot – roughly chopped
1 Medium Courgette – roughly chopped
1/2 Red Pepper – roughly chopped
6 Brussell sprouts or any kind of cabbage – finely chopped
2 Tomatoes – roughly chopped
1 Handful of cauliflower – chopped
1 small can chopped tomatoes
Beef stock cube
750ml Water
1 Tablespoon olive/rapeseed oil
1 teaspoon dried mixed Italian herbs
400g dried pasta or can of beans
Method
Heat oil in a large pan, add onion, garlic, carrot, courgette, pepper, sprouts, cauliflower and tomatoes and saute over a medium heat until soft, around 10 minutes
Add chopped tomatoes, herbs, stock cube and water, mix well and lower the heat. Add a lid to the pan and simmer for one hour
Adjust seasoning, top-up fluid ( a splash of wine counts ) and add the pasta (or beans) simmer until cooked
Serve with crusty bread and top with some Parmesan…..done
* It’s easy to double up on quantities for this recipe for minestrone soup for more servings

This blueberry smoothie recipe is heaven
I have had a Nutribullet for a good few years now, and this week I have upgraded to a new version, they are the best for making smooth, bit free smoothies
here are some suppliers
There is a lot of debate around smoothies because they break down the cells of the fruit, releasing the natural sugars more quickly.
You can counter this slightly by adding some protein powder and veggies (spinach is my go-to)
So I find fruit difficult as I don’t get on with the texture, weird I know (mushrooms are also in this category)
But I have learned to get around it, I love the flavour so for me being able to blend all manner of fruits into a drink is the best way to get the vitamins and minerals they provide,
I don’t have one everyday … although with a new gadget to play with I may,
If you don’t consume enough fruit, why not try a smoothie, you can use frozen fruit, milk alternatives and add superfood powders.
